Easy Garlic Butter and Spinach Pizza

Love cheese? Love pizza and garlic bread? This combines the best of both and is super easy and quick. This is gluten free and can easily be dairy free and as someone who can't really eat frozen pizza anymore this really hits the spot for a pizza craving! This can be a meal or an appetizer depending on the customization!
Ingredients
- Schar Gluten free pizza crusts - a box comes with two
- a couple handfuls of shredded mozzarella and cheddar (or favorite cheddar mix) cheese - or vegan cheese of choice
- a couple handfuls of spinach
- butter of choice - we use earth balance soy free buttery spread
- salt and garlic powder to taste
- half of a diced onion and bell pepper - optional
- shredded chicken - optional (we seasoned our chicken to taste with Italian seasoning, salt, and garlic powder)
Instructions
- pre-bake the pizza crust for about five minutes at 425 (the package says 410 but our toaster oven doesn't do 410 so we round up to 425)
- remove from oven and spread enough butter to cover the whole crust
- next season with salt and garlic powder to taste. be sure the whole crust gets some salt and garlic tho, this gives you a lot of the flavor along with the butter.
- add spinach first. it does cook down so don't be afraid to cover it.
- then add a layer of cheese - we did mozzarella but its up to you. we also did one crust where we mixed the cheddar and the mozzarella. be sure to get the cheese all the way to the edges for that crispy cheese!
- if you aren't doing any additional toppings bake at 425 for about 10-13 minutes or until the cheese and crust is golden.
- if adding additional toppings add chicken
- then another cheese layer
- and finally add the onion and pepper.
- baking at 425 for about the same time or until crust and cheese is golden. the extra cheese and toppings is going to closer to 13 minutes.
- if making two just repeat the steps.
Notes
THE LAYERS ARE IMPORTANT. We made one with the cheese on the bottom and spinach and chicken on top and the one with the layering provided in the above recipe tasted significantly better. LAYERS MATTER.
This is really simple and customizable! Don't be afraid to mix it up with whatever toppings you like. We aren't totally dairy free, still used cheese, but it would be super easy to substitute the cheeses for a completely vegan dish.
For two people we made both crusts and we did have about half a pizza leftover for the next day.
