White Chicken “Chili”
Yield: 4-6
This "chili" is great for a cold evening or for those random cravings of a creamy soup.
Ingredients
- 1 pound chicken cut into small cubes
- 1 medium onion diced
- 2 cans great northern beans
- 1-2 small to medium potatoes diced
- ¼ cup jalapeños (I only use a couple slices since my household isn’t big on spice. We also use the ones from a jar)
- 3-3 ½ cups of chicken broth
- 2 2 ½ tsp garlic powder
- 2 tsp salt
- 2 tsp cumin
- 1 tsp oregano
- ½ - 1 tsp white pepper
- 1 can coconut cream
Instructions
- Cook the chicken with the spices and jalapeños then add in the onion.
- Add the beans and potatoes and cook for about minute before adding the broth. Bring to a boil then reduce heat to low and simmer for 30 minutes.
- Turn off the heat and add the coconut cream. Let sit a few minutes and serve.
Notes:
This recipe is lighter on dairy but you can use heavy cream if you are not sensitive to dairy or don't want the slight sweetness that the coconut cream will bring.
