I'm sure many of you know about "ants on a log" but what if you wanted a snack with a little more...oomph and sweetness. I present to you, Beetles On A Log.
This classic after school snack normally made with peanut butter and raisons gets an upgrade by using almond butter and dates and can fill appetites of parents and children alike. It's satisfying, healthy, vegan friendly, and an easy to enjoy snack at work.
This has got to be a favorite snack of mine and I hope you enjoy it just as much as I do!
Ingredients
- Organic Celery
- Almond Butter or Nut Butter of choice
- Medjool Dates or Noor Dates if you cannot find Medjool
Instructions
- Clean and cut the celery to the size that you prefer for however many logs you want for snacking. I dry them off with a paper towel after, this helps the almond butter stick better to the celery.
- You can put the dates on whole or cut them in half. If they are pitted dates, like most medjool's, then you will of course have to remove the pits.
- Then just add the almond butter to the celery log, add as many dates as you like or can fit, and your done!
Notes:
This is vegan, gluten free, and low sugar (if you get almond butter without sugar). I also HIGHLY recommend using medjool dates if you can get ahold of them, though i know in small towns it can be hard as we have that struggle. But after looking around nearby town’s grocery stores we found some! So, hopefully you can too!
